Overview

Coordinates the daily food portioning and preparation for selected food items.

Responsibilities

  • Prepares a variety of meats, poultry, and seafood using different cooking techniques, and according to standard procedures.
  • Measures and mixes ingredients according to recipes to prepare soups, salads, gravies, and casseroles.
  • May add spices and seasonings to menu items, using own personal judgment.
  • Investigates food quality.
  • Delivers exceptional guest service at applicable food outlets (i.e., prompt, friendly, professional, and responsive), using proper greeting and departure phrases and service standards established by F&B management.
  • Confers with culinary staff and management to plan menus and perform related activities for applicable outlets and special events.
  • Assists Line Cooks in the performance of duties.
  • Uses correct knife skills and knife sharpening techniques.
  • Is familiar and can identify products in the kitchen.
  • Mixes ingredients for desserts, pastries, and breads.
  • Keeps the floor area in the line clear of debris and slipping hazards.
  • At the end of each work shift, ensures work stations, cooking ranges, and associated equipment have been properly cleared of cookware and food items, and the surfaces of equipment and stations are completely cleaned and sanitized.
  • May work in different areas/outlets as business or staffing needs dictate.
  • May perform special projects as assigned by the culinary management.
  • Follows instructions on proper oven temperatures and set ups.
  • Reads menus to estimate food requirements from storage.
  • Organizes and expedites menu items.
  • If stationed at applicable food outlet, provides information on resort amenities, events, promotions, etc. in order to increase levels of guest service.
  • Performs other duties as assigned.

Qualifications

  • High School Diploma or GED Certification preferred.
  • Prior experience in garnish, pantry, line cooking, baking, butchering, or other food service prep.
  • Must be able to work effectively within a team.
  • Basic English reading, writing, and conversation skills.
  • Must be able to read labels, ingredients, and instructions, and write basic lists, notes, and directions; able to converse effectively with co-workers and understand directions.
  • Able to maintain composure at times of high volume.
  • Must follow safety guidelines and grooming standards.
  • Must maintain uniforms, using proper washing and ironing techniques, if applicable.
  • Willingness to work flexible schedules and hours including nights, weekends, special events, and holidays.
  • Able to maintain composure at times of high volume.
  • Must obtain food handler card within 30 days of employment.
  • Must apply for, receive, and maintain a Gaming License from the Tribal Gaming Agency.
  • Native American hiring preference applies.
